Blueberry Lemon Walnut Bread

Clipped from an Aldi walnut bag ;)

Ingredients

  • 1 c walnuts
  • 1 c blueberries

dry

  • 2 c flour
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt

wet

  • 1 c sugar
  • 2 Tb lemon zest
  • 3/4 c buttermilk
  • 2 eggs
  • 1 tsp vanilla
  • 2 Tb melted butter
  • 2 Tb oil

glaze

  • 3 Tb sugar
  • 2 Tb lemon juice

Directions

  1. Preheat oven to 350.
  2. Spread a single layer of walnuts onto a baking sheet. Toast walnuts for 10-12 minutes (until light brown), then let cool.
  3. Whisk flour, baking powder, baking soda, and salt in a large bowl.
  4. Whisk sugar, lemon zest, buttermilk, eggs, vanilla, butter and oil in a separate bowl.
  5. Pour liquid ingredients into a pit in the dry ingredients and lightly combine. Don't over mix! Fold in walnuts and blueberries.
  6. Grease and flour an 8" x 4" loaf pan and spread the mixture into it.
  7. Bake 55-60 minutes. When finished, let cool for 20 minutes on a rack, remove from pan and cool to room temperature.

glaze

  1. Add sugar and lemon juice to a sauce pan. Boil over high heat, then reduce. Stir until sugar has dissolved.
  2. Brush on while bread is still warm.
