Creamy Mushroom Soup

From IP Cookbook

Ingredients

  • 2 cups mushrooms
  • 1 onion
  • 4 cups chicken stock
  • 1 cup heavy cream (or creme fraiche)
  • 1/4 cup butter
  • 2 garlic cloves
  • 2 teaspoons of thyme
  • Salt & pepper

Directions

  1. Saute butter and onion.
  2. Add garlic at end of saute.
  3. Add the rest of the ingredients (except the cream.)
  4. Cook on high pressure for 10 minutes, natural release for 5 mins.
  5. Stick blend the soup then add the cream.
